When you think summer, you think strawberries. Those beautiful red, sweet and delicious fruit, make any summer dessert just that much better. From shortcakes to pies, if there are strawberries in it, you know it will taste fantastic. So, when I saw these cute Brownie Kabobs on the Life Made Delicious site, I knew they would be the perfect hot weather dessert. The perfect end to a great BBQ, with friends or family. I mean chocolate and strawberries, could it get any better?
These were a snap to put together. Just bake the brownie and cool, then thread pieces alternating with your fruit. Drizzle with some melted chocolate and you've hit a home run. The brownies are chewy and the fruit help to lighten this dessert, while satisfying your sweet tooth. And not to mention; they're pretty cute too!

Brownie and Fruit Kabobs
Life Made Delicious
1 pkg Betty Crocker* Chocolate Chunk Brownie Mix
Water, vegetable oil and egg as called for on brownie box
4 cups (1 L) fresh pineapple chunks
5 cups (1.25 L) halved fresh strawberries
10 large bananas, cut into 1-inch pieces
1/2 cup (125 mL) semisweet chocolate chips
1/4 cup (50 mL) butter or margarine
20 (10-inch) bamboo skewers
Make brownies as directed on package. Cool completely.
Cut brownies into 1 1/4-inch squares.
Line cookie sheets with waxed paper. Alternately, thread 3 brownie squares, 2 pineapple chunks, 2 strawberry halves and 2 banana slices on each skewer. Place kabobs on waxed paper.
In small microwaveable bowl, microwave chocolate chips and butter uncovered on High 1 to 2 minutes, stirring once until chocolate is melted. Drizzle over kabobs.

These are so much fun to make. I just made them last month for a BBQ.
This looks so delicious! I think for the festive July 4th holiday, I will make some kind of white brownie mix and use blue food dye to color it - so there will be red strawberries, white (kinda) bananas, and blue brownies - all drizzled in chocolate! The people at work are going to love this - thanks for the idea!

Question: Does the chocolate dry hard our stay soft because you add butter?
It hardens a bit, but not totally stiff. Almost like a ganache.
